世界各国から厳選されたシェフが料理を振る舞うグルメイベント「Culinary Safari 2018」に、⽇本⼈シェフとして初めて選出された経験を持ち、2023年には当ホテルと同じくラグジュアリーコレクションに加盟するイタリア・ミラノの「エクセルシオールホテル・ガリア」が主催する「TOKYO WEEK」で日本食を披露。伝統的な和の調理法を大切にしながらも、豊かなインスピレーションと溢れるアイデアで発想する独創的なWASHOKUを創造する。

Ken Takahashi was the first Japanese chef selected for Culinary Safari 2018, a gourmet event in which rigorously selected chefs from around the world serve up their dishes. In 2023, he presented Japanese cuisine at TOKYO WEEK, hosted by Excelsior Hotel Gallia in Milan, Italy, which similarly to us is a member of The Luxury Collection. Always respectful of traditional Japanese methods, Chef Takahashi creates contemporary washoku with a wealth of inspiration and ideas.
